
This is a delicious and easy way to pack a heap of greens into your diet. Peas are a good source of vitamin C, E, Zinc and other antioxidants that strengthen your immune system. Broccoli contains a small amount of almost every nutrient humans need for good health and a good dose of many vitamins and minerals. This dish is low in fat, high in fibre and has a moderate amount of protein.
Ingredients
- 1 tbsp oil for frying
- 1 onion (approx. 200g), diced
- 2 cloves garlic, finely minced
- 1 carrot (approx. 90g), roughly chopped
- 1 stick celery (approx. 75g), roughly chopped
- 1 small broccoli (approx. 250g), cut into florets and the stem sliced
- 2 cups frozen or fresh peas
- 80g fresh spinach
- 3 cups water
- 4 tsp Urban Forager Vegetable Stock Concentrate
Instructions
- Heat a medium sized pan over medium-low heat
- Add oil and bring to heat
- Add onion and saute until onion is transparent and soft
- Add garlic and stir for a few minutes or until garlic changes colour
- Add carrot, celery, broccoli, water and stock and bring to low simmer
- Simmer for 5 minutes or until veggies are just tender
- Add peas and simmer a further 3 minutes
- Add spinach and stir until wilted
- Puree with a stick blender
Serve with yoghurt or cream and fresh herbs, and some good crusty bread.
