Green Goddess Soup

This is a delicious and easy way to pack a heap of greens into your diet.  Peas are a good source of vitamin C, E, Zinc and other antioxidants that strengthen your immune system.  Broccoli contains a small amount of almost every nutrient humans need for good health and a good dose of many vitamins and minerals. This dish is low in fat, high in fibre and has a moderate amount of protein.

Ingredients

  • 1 tbsp oil for frying 
  • 1 onion (approx. 200g), diced 
  • 2 cloves garlic, finely minced 
  • 1 carrot (approx. 90g), roughly chopped 
  • 1 stick celery (approx. 75g), roughly chopped 
  • 1 small broccoli (approx. 250g), cut into florets and the stem sliced 
  • 2 cups frozen or fresh peas 
  • 80g fresh spinach 
  • 3 cups water 
  • 4 tsp Urban Forager Vegetable Stock Concentrate 

Instructions

  1. Heat a medium sized pan over medium-low heat 
  2. Add oil and bring to heat 
  3. Add onion and saute until onion is transparent and soft 
  4. Add garlic and stir for a few minutes or until garlic changes colour  
  5. Add carrot, celery, broccoli, water and stock and bring to low simmer 
  6. Simmer for 5 minutes or until veggies are just tender 
  7. Add peas and simmer a further 3 minutes 
  8. Add spinach and stir until wilted 
  9. Puree with a stick blender 

Serve with yoghurt or cream and fresh herbs, and some good crusty bread.
