Pickled Red Onions

Ingredients

  • 1 red onion, very finely sliced
  • juice of 1 lime or ½ a lemon
  • parsley (optional)

Instructions

  1. Combine all ingredients and leave in fridge to pickle for a day
  2. Shake a few times through the day to distribute the liquid
  3. This will last for ages in the fridge and become a favourite addition to every salad.
