Plum Jam Drop Cookies
Ingredients
- Urban Forager Blood Plum Jam
- 3 cups all-purpose flour
- 1 ¼ teaspoons baking powder
- ¾ teaspoon salt
- 1 ½ cups raw sugar
- ¾ cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
You will need
- A small heart-shaped cookie cutter
- Large round cookie cutter (or a glass/mug would work if you don’t have one)
- Baking paper
Method
- Line an oven tray with baking paper and set aside
- Combine flour, baking powder and salt in a bowl & set aside.
- Beat butter and sugar until fluffy in a large bowl. Mix in eggs and vanilla until well blended. Gradually beat flour mixture into butter mixture until smooth.
- Divide dough in half; shape into 2 flat disks. Place dough in a container and cover, refrigerate for 30 minutes to 1 hour or until firm enough to roll.
- Preheat oven to 190°C. Roll out dough 3mm thick on a lightly floured surface. Cut dough with the large cookie cutter. Cut centres out of half of the cookies with the smaller heart-shaped cutter.
- Place cookies 3cm apart on baking paper or a non-stick foil-lined cookie sheet. Bake for 6-8 minutes.
- Once cooled, spread 1 teaspoon of Urban Forager Blood Plum jam over whole cookies. Top with remaining cut-out cookies, sandwich style.
- Pop it into the mouth of a loved one and enjoy!
